Why you should soak your nuts

In nature, enzyme inhibitors and toxic substances protect nuts, seeds and grains until perfect growing conditions are in place. With enough rain and sun these little guys come alive (literally)! So when we soak our nuts, seeds & gains overnight, we mimic nature. And once you see the grime that comes off you will be asking yourself why you haven’t soaked earlier.
Top 8 Reasons why you should soak:

  1. To remove or reduce phytic acid.
  2. To neutralize the enzyme inhibitors.
  3. To encourage the production of beneficial enzymes.
  4. To increase absorption of vitamins and minerals.
  5. To break down gluten (grains) and make digestion easier.

  8. And my favorite reason to soak: enhanced flavor!

 

Phytic Acid – All grains contain phytic acid in the outer layer or bran, which can block absorption of calcium, magnesium, copper, iron and especially zinc in the intestinal tract.

Enzyme Inhibitors – They warp, clog or denature an active site of an enzyme. When you soak and release these inhibitors you help your body to properly digest the food, which translates to less bloating and gas.

Directions for Soaking

Soaking times vary, typically the more dense the nut, the longer the soaking time.

  1. Rinse your nuts / seeds / grains.
  2. Place them in a glass bowl and completely submerge with filtered water (approx. 2x the amount of water to nuts)

Once they have soaked for the appropriate amount of time (I soak all my nuts, seeds and gains overnight) rinse well and enjoy immediately.
